3-4lbs - of chicken cut in serving size pieces
1 can - crushed pineapple
2tbsp - cornstarch
3/4c - sugar
1/2c - soy sauce
1/4c - vinegar
1tsp - garlic powder
1/2tsp - ground ginger
1/4tsp - pepper
Drain pineapple, reserving 2 tbsp juice. Combine cornstarch, reserved pineapple juice, sugar, soy sauce, vinegar, garlic, ginger, and pepper in saucepan. Cook over meduim heat stirring constantly until sauce thickens and bubbles. Place chicken in shallow baking dish. Pour sauce over chicken. Bake at 400f for 30 minutes stirring several times. Turn chicken and stir in pineapple. Bake for 30 minutes longer or until done.
